Lot 151 is a sparkling wine cuvee of Petit Manseng, Traminette and Chardonnay. Petit Manseng grapes were harvested at 16 Brix to retain natural acidity and produce a low alcohol base wine. Shortly after, the base wine was inoculated with the use of encapsulated yeast and fermented. The finished sparkling wine was finished and a dosage was made to two sweetness levels: Brut & and Demi Sec. This wine will not be available in stores but is instead an internal release for the 50th anniversary of the college. Later vintages of sparkling wine will be released to the public in the near future.
