Made from 100% Chambourcin grapes harvested at 24 brix. This wine underwent wild fermentation, with no added yeast. Fermented at a temperature of 58 degrees Fahrenheit. Additionally, delestage was performed twice daily for maximum color and flavor extraction. Age this wine over the next three years. Vintage 2012, alcohol 12.5%, 0% Residual Sugar.
Extremely deep purple hues confront your senses. This wine is very fresh supported by a moderate body and tannins but notably an acid backbone. Aromas of fresh cut berry fruits overwhelm the senses like cherries, raspberries, and raisins. Leaning towards a flavor profile of all-spice and clove as it ages. A fruit-forward wine complimented by a elegant texture and savory spice. reminiscent of a hot Zinfandel or complex Pinot Noir.
Pair with pork loin or carolina bar-b-que, fresh berry or cream based desserts like raspberry compote.
