We used hand-selected fruit from our college’s vineyard selected based on training system, quality of grape, and flavor. These grapes were macerated with enzymes for 6 hours on the skins to extract beneficial aroma and flavor compounds. We age this wine in Hungarian Oak for three months to add body and complexity. Vintage 2013, alcohol 11.5%, 0% Residual Sugar.
The result of our efforts is a drinkable, balanced, and interesting wine. Distinct Lime, Pear, Rose, Lychee, Citrus, and Cream fill the nose. The nose is very similar to Gewurztraminer, the grape’s parent. The Hungarian oak lends orange cream and robust oak. Enjoy smooth acidity and well blended style with an extremely long finish.
Pair with spicy seafood dishes to combat the complexity, spicy Thai and Indian. soft cheeses and sweet desserts.
